The Perfect Salsa Recipe

Taco Tuesday has become a staple in a lot of American households. Even restaurant chains have gotten behind the idea and cashed in big. What’s there not to like? Yummy taco meat seasoned to perfection topped off with pretty much whatever you are in the mood for... Add in a margarita on the side and you might as well be sitting on a beach somewhere. 

Like most things, this new Covid world has got us all doing things a bit differently. Those that typically go out have found cheaper options and to stay in. And tacos make everything  a bit more enjoyable.

 

So what is the key to the perfect taco, anyway?--- The perfect salsa!  

And we’ve got you covered. Not only is this salsa  recipe delicious, but it gets extra points for being so simple, you can put it together in minutes.  

 

What you’ll need: 

  • 14oz can diced tomatoes 

  • 2-4 fresh tomatoes (to taste) 

  • ½ white onion 

  • 4-5 Tbs minced garlic 

  • 1 head of cilantro 

  • Zest and juice of two small limes 

  • 2-3 jalapenos 

  • Salt (to taste)  

 

A few tips before we get started: 

  • You can purchase minced garlic in a jar at your local grocery store. This saves time (and frustration) by not having to mince the garlic yourself. 

  • If you don’t have any fresh tomatoes on hand you can always use two cans of diced tomatoes instead. 

  • For a milder salsa, cut and wash out all the seeds and the spines of the peppers. This is where most of the heat comes from so taking them out will give you the jalapeno flavor without all the heat. 

  • Make the salsa a few hours before you need it and let it chill in the fridge. Giving it time to sit allows the flavors to all come together. You’ll be surprised what a difference this makes. 

For Chunky: 

  1. Dice fresh tomatoes, onion, garlic, and cilantro 

  2. Put in a medium bowl with the can of diced tomatoes 

  3. Zest and juice 2-3 limes and add to the bowl 

  4. Chop jalapenos and add then in one at a time. Taste as you go to achieve the spice level you prefer. 

  5. Add salt to taste. 

 

For Blended: 

  1. Dump the can of tomatoes, fresh tomatoes (in halves), half of an onion (chopped or cut into fourths), garlic, limes zest and juice, and jalapenos 1 at a time tasting as you go. 

  2. Blend everything up. 

  3. Add in more jalapenos if needed. 

  4. Add salt to taste.
